Keep in mind I am not an English major and yes, there could have been pictures and all, but more importantly I just want to get you the recipes, and some other important information. I want you to be well and happy. “It Starts With Food” by Melissa Hartwig is a great book. If you do what they say for 30 days, you’ll feel awesome, but it’s important that you eat like this forever. There are many testimonials in the book that may surprise you. If this way of eating is not for you, then find one that fits you.
Why am I creating this blog? It is a passion of mine to learn what I can because I am a strong believer that knowledge is power. The information I’ve learned will help me make awesome choices when it comes to a healthy lifestyle. I have had countless health issues throughout life, and I feel like maybe it happened for a reason. The reason is to help others so they don’t have to go through what I did.
In my life, I’ve had asthma, ADD, poor concentration, low self esteem, sugar cravings, weight problems in my 20s, stomach aches when I was a kid, migraines, vertigo for a short time, joint pain, and unexplained rashes on hands, feet, and elbows. I had unexplained bleeding that they never figured out, half of my thyroid taken out, low grade fever for months, acid reflux, brain fog when I was at my worst in 2010, fatigue, and very crabby with my students. It took me 3 years to get pregnant, I had my parathyroid taken out, I had osteopenia and dry skin, and I am sure there is more. This all went away when I went off of gluten.
I felt great for a few months. What I didn’t know was that I had a leaky gut and here came the roller coaster of food sensitivities. Please make sure you find a Dr that can figure out why you have food sensitivities and the leaky gut. Conventional doctors don’t get it. In 2010 when I was so sick, Froedert GI Dr. told me I had crohns’ disease and wanted me to be on a lifetime drug that caused cancer. I couldn’t do it. I was desperate to find another way, so over Christmas break of 2010 I was buried in a book that said you can heal crohns with diet. As I was searching my friend told me I should go gluten free. I did, and in 2 days I felt better than I have in my entire life. My naturopath doctor told me she felt I was celiac because of how sensitive I was.
I truly believe I had celiac my whole life and my siblings and father have a problem with gluten also. Not everyone is willing to go on this kind of diet, which makes me sad. It is hard to see people you care about suffer when they don’t have to. If you have a gluten sensitivity or celiac disease, you can eventually get cancer and other diseases. Wheat slowly poisons your body and even if you don’t have that the gene for it, you will feel better if you don’t eat it.
If I were still eating gluten I would be so sick right now, and on many different drugs. I am on only one drug, which is a low dose every other day of synthroid because of my thyroid being taken out. Dr. Osborne said soon I will be weaning myself off of it. I eat all whole foods that are mostly organic, grass fed meat, veggies, fruit, and nuts. Most of the recipes are grain free and paleo. I feel so much better when I eat this way. I hope you will find the recipes so simple that you decide to jump on the wagon to Paleo or at least start with going gluten free. If you are the kind of person that needs to slowly move into something, then do that. I just jumped into eating gluten free because I was so sick. It is important when switching over to a healthier diet to have a bowel movement daily. Eat those veggies and drink plenty of good water. I drink reverse osmosis water, as it doesn’t have chlorine, fluoride, and other junk in it. I am still healing so I want the clean water.
Keep in mind that if you go gluten free, you may not feel great right away like I did. It may take a few weeks, as your body is detoxing. You could feel tired, achy, and experience other strange symptoms. Don’t give up because of it, and make sure you are 100% off of gluten or it won’t work. I strongly recommend you listen to Dr Peter Osborne’s youtube called “Leaky Gut Cure. Fastest Way to cure leaky gut”. Karen Brimeyer interviews the doctor. He has wonderful youtubes that I have learned so much from. They are only for a few minutes and remember: Knowledge is power. Another awesome youtube is Dr. Denboer “The Truth about Gluten.” It is so interesting, and I love the stories he shares about people he has helped. One lady was suicidal and he saved her. It is not just about people with digestion problems. Studies show that there is a connection with gluten and ADD, ADHD, autism, depression, bipolar disorder, schizophrenia, heart problems, rheumatoid arthritis, fibromyalgia, nerve problems and more.
One more thing: Yes, it does cost a little more to eat this way, but I will cut back in other areas before I cut back on nutritious food. I do have an article in the blog about eating on a budget. To save time, I grill up bison burgers, chicken breasts, and grassfed burgers, and freeze them.
