You can prepare it in many ways, but our favorite it slicing it thin and putting sea salt on it. First, make sure you peel off the skin. I have used it as a bun with a burger, adding an onion. I love the crunch aspect.

You can shred it and make into hash browns.

You can cut and boil or bake with some oil. Another option is to mash it up with cauliflower or potatoes.

 

Try it. It is very common at a farmer’s market.
