Quinoa Lentil or Chickpea Salad


  • 4 cups of Quinoa
  • 1 cup of lentils or can of chick peas
  • 2 green onions sliced
  • 1/4 cup of cilantro or parsley
  • 6 T of apple cider vinegar
  • 1 1/2 tsp of gr cumin
  • 3/4 tsp gr coriander
  • 1/2 tsp salt
  • 1/3 cup tea seed oil

In large bowl gently combine quinoa , lentils, gr onions, and parsley. In another bowl, combine vinegar, cumin, coriander and salt: gradually whisk in oil. Pour over mixture and gently toss to combine.
