Mushroom Soup Substitute

MUSHROOM SOUP SUBSTITUTE! 

  • 16 oz mushrooms
  • 1 large onion (for me, the bigger the better)
  • 4 cloves garlic
  • 1 tsp thyme
  • 1 tsp salt
  • 1⁄4 tsp pepper
  • 1⁄4 cup parsley
  • 1 cup rice milk, almond milk or substitute

Lightly sauté mushrooms with onions and garlic. Add milk and seasonings. Blend and use as a GREAT sauce in any recipe, or over rice, millet, pilaf or quinoa! YUM!
