- 1 medium ripe tomato, chopped into 1⁄2 inch cubes
- 1 medium mango, chopped into 1⁄2 inch cubes
- 1 medium avocado, chopped into 1⁄2 inch cubes
- 6–10 fresh mint or basil leaves, torn up (optional)
- Pinch of sea salt
- 1⁄4 – 1⁄2 teaspoon of cinnamon
- optional: 1⁄2 teaspoon of balsamic vinegar
- Once all of your ingredients are chopped to 1⁄2 inch cubes, place in a bowl and stir gently. Allow the flavours to mingle for 15–30 minutes (or not!).
- Serve on its own in a bowl, or over mixed greens or sprouts.
