Mango, Tomato & Avocado Bowl

INGREDIENTS

  • 1 medium ripe tomato, chopped into 1⁄2 inch cubes
  • 1 medium mango, chopped 
into 1⁄2 inch cubes
  • 1 medium avocado, chopped 
into 1⁄2 inch cubes
  • 6–10 fresh mint or basil 
leaves, torn up (optional)
  • Pinch of sea salt
  • 1⁄4 – 1⁄2 teaspoon of 
cinnamon
  • optional: 1⁄2 teaspoon of 
balsamic vinegar

Serves: 1-2

DIRECTIONS

  1. Once all of your ingredients are chopped to 1⁄2 inch cubes, place in a bowl and stir gently. Allow the flavours to mingle for 15–30 minutes (or not!).
  2. Serve on its own in a bowl, or over mixed greens or sprouts.
