- 1 lg. head of cauliflower, cut into bite-size pieces
- 3 large sweet potatoes, cubed
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 tsp. sea salt
- 5 cups water
- pepper to taste
- 1 tsp. of orange blendfresh
***To make it easier just add water, cauliflower and sweet potatoes.
Preheat oven to 400degrees. Place cauliflower on parchment paper-lined baking sheet. Roast 20-30 minutes or until tender.
In large saucepan combine sweet potatoes, onion, garlic, salt, and water. Bring to a boil Reduce heat: cook over medium heat until sweet potatoes are tender. Add cauliflower, divide mixture in half. Cool.
Puree once portion in a blender: combine with second portion. Season with pepper to taste.
