Flourless Banana Pancakes


  • 2 eggs
  • 1 very ripe banana
  • ¼ c. almond butter
  • 2 T coconut milk
  • 1 tsp of baking powder
  • 1 tsp. cinnamon
  • 1 tsp vanilla extract

Directions: Mush banana first, then add the rest of the ingredients and stir. Medium heat. Batter should be pretty liquidy. Use coconut oil in pan and when it bubbles up (about 2 minutes) turn over. You can also put blueberries or apples cut up or apple sauce on top with nuts you like.
