Banana Bread

Ingredients

  • 3 eggs, seperated
  • 4 T honey
  • 4 T. of nut or avocado oil
  • 2 small bananas
  • 1 tsp vanilla
  • 1 c. almond flour

Preheat oven to 350

Cream egg and honey in a large bowl until light and fluffy. Add the oil , vanilla, mashed banana and almond flour and combine well.

In a separate bowl beat the egg whites until stiff peaks form. Using a clean metal spoon, fold a spoonful of the egg whites into the banana mixture to pull it away from the sides before gradually folding the rest of the egg whites into the mixture. Be careful not to knock all the air out of the egg whites.

Line a loaf tin with baking paper and por the mixture into this. Place in the oven for 40-45 min or until cooked. Cake is cooked when a toothpick comes out of bread clean. It ay be dark on the top but is wonderfully fluffy and moist.
