If you need something sweet, then this is a great alternative to the junk they have in the store or even other baked goods.
- 2 cups of almond flour
- 1 cup or organic coconut sugar or any sugar
- 2 egg whites; or 2 T of chia in 6 T water; or 2 T flax meal with 6 T of water
- 2 Tsp of lemon zest
Mix and put a 1 inch ball on parchment paper and push down to ¼ inch thickness.
350 degrees around 10 minutes or til browned on bottom.
Variations-can add nuts to make it more interesting and cacao nibs
For chocolate or carob cookies you could put 3 T of the powder instead of lemon zest.
