- 6 cups watermelon, diced
- ¼ cup fresh mint
Directions: Puree the watermelon with the mint in a food processor until completely smooth. Place the mixture in a shallow dish, cover with clingfilm, and freeze for 30 minutes. Scrape the edges of the mixture with a fork, then return the dish to the freezer. Repeat this mixing and breaking up of any ice crystals using a fork every half an hour for about 3 hours, then serve immediately, garnished with a sprig of fresh mint.
